Breakfast Muffins

Probably the healthiest muffins ever!! 

Just mash up two bananas and four eggs until 90% smooth

Butter up your muffin tin and pop in the berries of your choice (or ham and cheese) 

Then, dollop in the banana/egg mix and bake for 12-15 mins at 200c

Perfect morning fuel and delicious!!!

Low Carb Lasagne

Here we're using leeks and eggs instead of pasta and white sauce.

Brown your mince with onions and garlic, adding chopped peppers and tinned tomatoes. Let simmer for 20 minutes...while you're waiting, slice your leeks with one long cut down the length and flatten out into sheets (resembling pasta sheets!) 

Now wash and rinse the leeks and leave to dry, evaporating any excess moisture on a non-stick pan, 

Now place two layers of mince, leeks and beef tomatoes in a dish and pour three whisked eggs over the top.

Bake in a pre-heated oven at 180c for 15 minutes. Then just add cheese and bake until golden brown!

Roughly 10g carbohydrates per serving compared to 40g with the pasta!

BOOM! Filling and low carb treat!! 

 

Cauliflower Pizza Base

This one's a winner... if you're a bread lover and still want it in your life...here's the answer!

BASE- Take 2 Cups of grated cauliflower, 1 Cup of grated parmasan cheese and 1 egg

Start by drying out the cauliflower on a frying pan over a medium heat .. removing all the moisture is crucial for success!

Once completed, whisk the cheese, egg and cauliflower together in a bowl; this mixture will be your base!

Now gently smooth and shape the base onto greaseproof paper in a pre-heated oven for 15 mins (180c). 

Once the base is cooked...peel off the paper and leave to cool! 

To make the sauce, mix chopped tomatoes, tomato purée, fresh basil and onions in a saucepan and heat gently until cooked through.

For the toppings, I recommend low carb options such as spinach, mushrooms and fresh basil. 

Start assembling your pizza by coating the base with your sauce, then sprinkle on some cheese and slop on the toppings of your choice! 

Bake for a further 10 minutes and enjoy!! 

Take away pizza: roughly 2000 calories

Cauliflower Pizza: 500 calories. . .
